I noticed a certain style in the 70s in Ringo's solo stuff. Alot of it sounds latin. His best known "Photograph" sounds very latin in style, then there's "The No No Song". There were other styles but mainly the latin style seems pretty dominat throughout his 70s stuff.

I don't know if I'd call these tunes latin in style, but they certainly make use of some instuments mainly used in latin songs. "Photograph" has some guiro and a lot of castanets towards the end. Know who else loved usuing castanets on pop records? Phil Spector. Listen to the Ronettes and you'll hear them all over it.

The "No-No Song" was written by country & western singer/songwriter Hoyt Axton...there are some castanets on this one too, but just in the verse about Spain. In listening to this one again, I think the latin feel of which you speak comes from the bass, which is run on the off beat, giving it a sort of "latin shuffle".

It just seems that Ringo always embraced that style. Perhaps because alot of latin music is centered on the percussion and rhythem.
Hoyt Axton? Wasn't he in that 1984 movie "Gremlins"? I got the DVD.
